Cookery notes: Penne pasta with green beans, chilli and balsamic

I’m not a massive pasta fan and pasta with tomato-based sauce, you can keep it. Seeking a lunch the other day I was quite surprised how well this concoction turned out

You’ll need

  • Cooked penne pasta (no salt in the water)
  • Boiled green beans (cook nice and soft!)
  • Prosciutto cotto or any thinly sliced cooked ham
  • Olive oil
  • Chopped onions
  • Chopped cherry tomatoes
  • Chopped garlic
  • Soy sauce
  • A slug of decent Balsamic vinegar
  • Sweet chilli sauce
  • Lashings of grated parmesan
  • Black pepper

It’s easiest if you use freshly boiled penne and freshly boiled green beans so that heating it up is a little easier but you can always microwave the two quickly before mixing with the other stuff.

Fry the onions in olive oil with the halved cherry tomatoes and the garlic until the onions are soft, then throw into the penne and green beans with ripped up Prosciutto and stir, season with plenty of soy sauce, balsamic and a generous slug of sweet chill sauce and a good few grinds of black pepper. Throw in a bowl and cover in parmesan.
